The Prudent Pantry: Knock-off Girl Scout Cookies

Who doesn't love Girl Scout Cookies? But the $4 a box can be pretty steep, especially since they lowered the number of cookies per box. I don't mind paying for them when I have the cash--the money does go to the Girl Scouts (
though only a small portion goes to the troop selling the cookies)--but Girl Scout Season comes but once a year and sometimes a girl (
or guy) needs a cookie out of season, or when there isn't a Scout handy.
I scoured the Internet for the best knock-off recipes. Here's what I've found.
Samoas, aka Caramel De-Lites. These are my absolute favorite cookies. Baking Bites has two recipes that both sound great:
Thin Mints. These are really what comes to mind when I think Girl Scout Cookies. I keep mine in the freezer, do you?
Tagalongs. For years I thought these were called Tagalog, which is the language of the Philippines. Oops!
