Cook Fast, Live Young: Celebrate National Salad Month by Going “Greens”

May is National Salad Month! Celebrate by eating a salad every day (side salads count!) and trying one new salad at least once a week. “But that’s a lot of salad,” you say, “how can I ever accomplish such a lofty goal?” Glad you asked. Read on for salad tips and tricks and a few suggestions to spice up your salad life. Remember: green is good! Buy lettuce at the Farmer’s Market

One of the biggest problems I have when I buy lettuce is that it ends up going bad before I can use it, and I end up getting mad at all the money I’m wasting. Luckily, I discovered the local farmer’s market. Buy your greens there and you’ll discover that they often stay good for 2 to 3 times as long! Plus, you’ll often be paying even less than you would at a supermarket. Just remember to wash it off before you eat it!

Bulk up on ingredients

If you’re anything like me, there’s a certain list of foods that you know you like in your salads. That doesn’t mean you’re not open to trying new things, just that you’ve got preferences. Now’s the perfect time to stock up on things you know you like — especially those ingredients that won’t go bad. Some typical favorites are nuts, pasta, dried or canned fruits, and–though, of course, they will eventually go bad–cheeses.

Make your own dressing

If you’ve never made salad dressing before, you’ll be shocked at how easy many recipes are. Most only have three or four ingredients, and require little more from you than stirring them together in a bowl. Look at what goes into your favorite dressings–chances are you’ll already have many of the ingredients on hand. No need to spend any more cash!

Find new favorites

Caesar salad may be your thing, but if you try to eat it for 30 days straight, you’ll probably go a little crazy. Do yourself a favor and use National Salad Month as an opportunity to explore what’s out there in the salad world. Then you can add these new salads into your normal routine!

    I love spinach or arugula salads. Add some fruit and basic olive oil with balsamic vinegar and you’re good to go!

    I eat salads three times a week. I like adding some pasta, diced potato, hard boiled egg and cheese along with the lettuce, tomato, carrots, celery and avocado. Yum!

    It always shocks me that people don’t make their own dressing. It’s so easy! It tastes so much better!
