Make the Most of Christmas Leftovers

The key to making sure food doesn’t go to waste after a big meal is planning. When you’re creating the menu for Christmas dinner, you should also create a meal plan for the leftovers. Typically, if you are preparing a whole turkey, roast beef, or ham, you can expect that you won’t eat all of it–and you’ll need to eat it relatively quickly for safety reasons.
Turkey and roast beef last about two or three days, and ham will save for four or five days. Don’t think you’ll use them fast enough? Pack them up in smaller batches and freeze them for later in the year.

1 9″ pie crust
1 cup half and half
4 eggs, beaten
3 tbsp. honey mustard
2 tbsp. flour
1/2 teaspoon salt
1/2 teaspoon dried thyme leaves
pepper to taste
1-1/2 cups cubed, cooked ham
1-1/2 cups shredded Swiss or Havarti cheese
1 cup frozen chopped spinach, thawed, well drained
Preheat oven to 350 degrees F. Beat half and half, eggs, mustard, flour, salt, thyme, and pepper until combined. Then add the ham, Swiss cheese, and spinach to the crust, and pour the egg mix on top. Bake for 40 to 50 minutes until crust is golden.

Your Favorite Dressing
Slice the tomatoes and onions. Add chopped roast beef and spinach. Top with your favorite salad dressing, and serve.
This is a classic. Many ingredients from the big feast can be thrown between two slices of bread (or on those leftover rolls) for a quick snack. Consider adding the cranberry sauce, mashed potatoes, sweet potatoes, and gravy.
