Chicken and Cheese Enchiladas

  • 1/2 small red onion
  • 1 1/2 pounds tomatillos
  • 1-2 serrano chile peppers
  • 1/2 cup low-sodium chicken broth
  • Kosher salt
  • Pinch of sugar
  • 8 corn tortillas
  • 3 cups shredded, cooked chicken
  • 2 1/2 cups shredded mozzarella and/or Monterey Jack cheese

Honey Cashew Chicken with Rice

  • 1 cup rice – instant or long grain
  • 2 (6-ounce) skinless, boneless chicken breast halves
  • 2 tablespoons cornstarch
